Cheese markets have been rallying and that is good news for Wisconsins' dairy industry where 90%
of states milk supply is used for the manufacturing of cheese. And while the state still produces many of the more traditional commodity cheeses, Wisconsin has become the premiere manufacturer of specialty cheese. Matt Joyce of the Wisconsin Milk Marketing Board explains to Local 5 Ag Reporter Mike Austin what the board is doing to help Wisconsin get a bigger slice of that specialty market.
